Impress your Guests with the Ultimate BBQ Menu!

When it comes to hosting a memorable BBQ, the right grill can make all the difference. The Weber range provides the perfect platform to showcase your grilling skills and leave your guests in awe. In this blog post, we'll guide you through a selection of impressive recipes that are sure to make a lasting impression. 

 

To Start:

Grilled Shrimp Skewers with Mango Salsa

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Bamboo skewers (soaked in water for 30 minutes to avoid burning)
  • For the Mango Salsa:
    • 1 ripe mango, diced
    • 1/4 cup red onion, finely chopped
    • 1/4 cup fresh coriander, chopped
    • 1 jalapeño pepper, seeded and minced
    • 1 tablespoon lime juice
    • Salt to taste

Instructions:

  1. Preheat your Weber grill to medium-high heat.
  2. In a bowl, combine olive oil, lime juice, smoked paprika, salt, and pepper. Toss the shrimp in the mixture and let it marinate for at least 10 minutes.
  3. Thread the marinated shrimp onto the soaked skewers.
  4. Place the shrimp skewers on the preheated grill and cook for 2-3 minutes per side until they turn pink and slightly charred.
  5. In the meantime, prepare the mango salsa by combining all the salsa ingredients in a bowl.
  6. Serve the grilled shrimp skewers with a side of mango salsa. The combination of smoky shrimp and tangy mango salsa will leave your taste buds craving for more.

The Main Event:

BBQ Ribs with Homemade Kansas City Style Sauce

Ingredients:

  • 3 lbs baby back ribs
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon chilli powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Kansas City Style Sauce:
    • 1 cup ketchup
    • 1/4 cup apple cider vinegar
    • 1/4 cup brown sugar
    • 2 tablespoons honey
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon Dijon mustard
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon garlic powder
    • Salt and pepper to taste

Instructions:

    1. Preheat your Weber grill for indirect cooking at 125°C
    2. In a small bowl, mix together brown sugar, paprika, chilli powder, garlic powder, onion powder, salt, and black pepper to create a dry rub.
    3. Remove the membrane from the back of the ribs and generously apply the dry rub on both sides of the ribs, pressing it into the meat.
    4. Place the ribs on the grill, bone-side down, away from the direct heat.
    5. Close the grill lid and let the ribs cook for 4-5 hours, maintaining a consistent temperature.
    6. Meanwhile, prepare the Kansas City Style Sauce by combining all the sauce ingredients in a saucepan. Simmer over low heat for 10-15 minutes until the flavours meld together.
    7. After the ribs have cooked for several hours, brush them with the prepared sauce and continue cooking for another 30 minutes to allow the sauce to caramelise.
    8. Remove the ribs from the grill and let them rest for a few minutes before cutting them into individual servings. Serve the succulent BBQ ribs with additional sauce on the side for dipping.

Something Sweet to Finish:

Grilled Pineapple with Honey-Cinnamon Glaze

Ingredients:

  • 1 ripe pineapple, peeled and cored
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • Vanilla ice cream (optional)

Instructions:

  1. Preheat your Weber grill to medium heat.
  2. Cut the pineapple into thick rings.
  3. In a small bowl, whisk together honey and cinnamon to create a glaze.
  4. Brush both sides of the pineapple rings with the honey-cinnamon glaze.
  5. Place the pineapple rings on the preheated grill and cook for 3-4 minutes per side until grill marks appear.
  6. Remove the grilled pineapple from the grill and serve it as is or alongside a scoop of vanilla ice cream for a delightful combination of sweet and smoky flavours.
